Great summer dessert. You can make it in advance and keep it in the freezer. When you want a cold, sweet, chocolaty, nutty dessert, it is right there in your freezer.
1 cup milk
500gr Petit beurre cookie
1 1/2 cup sugar
1/2 cup chopped nut mixture (walnut, hazelnut, almond, pistachio)
1/2 cup cocoa powder
1 grated lemon zest
- Add milk, sugar and cocoa powder in a pot. Stir the mixture until the sugar dissolves above medium-high heat. Let the mixture cool down.
- Cut the cookies into small pieces in a big mixing bowl. Add nuts, lemon zest, and sugar/milk/cocoa mixture. Mix thoroughly, until almost all cookies are wet.
- Put the mixture on a freezer bag,and shape into a round or triangle log.
- Keep it in the freezer.
- Before serving, remove from the freezer and cut into pieces.
