Taze demlenmiş bir çayla börek gibisi var mı? Ispanaklı, peynirli, kıymalı, ya da patatesli yapabilirsiniz bu böreği. Recipe available in Turkish and English.

3 adet yufka
75 gr. margarin
1 çay bardağı yoğurt
1 çay bardağı süt
1 yumurta

İçi
500 gr ıspanak
Yarım soğan
Beyaz peynir (isteğe göre)
Susam, çörek otu

  • Soğanı az yağda soldurup ıspanağı ekleyin. 5 dakika pişirdikten sonra, soğumaya bırakın. Soğuduktan sonra peyniri ekleyin.
  • Margarini tavada eritin, soğuduktan sonra içine yoğurt, süt ve yumurtanın beyazını (sarısı yüzüne) ilave edin, iyice karıştırın (margarin iyice soğumuş olmalı yumurtaların içine kırıldığında pişmemesi için).
  • Yufkayı tezgaha yayın. Yarısına yoğurtlu karışımdan ince tabaka halinde fırça ile sürün. Diğer yarıyı üzerine katlayıp yarım ay şekli verin. Onun üzerine de karışımdan sürün.
  • Harçtan uzun olan tarafa şerit halinde yayın ve yufkayı rulo olarak sarın.
  • Yağlanmış tepsinin ortasından başlayıp helezon şekli vererek tüm yufkalara aynı işlemi uygulayıp tepsiye yerleştirin.
  • Kalan yoğurtlu, margarinli harcın içine yumurtanın sarısını ekleyip böreğin üzerine her tarafına yedirecek şekilde döküp sürün. En son üzerine susam ve çörek otu serpin.
  • Önceden 180°C’ye ısıtılmış fırında üzeri kızarana kadar, yaklaşık 35-40 dakika pişirin.

In English;

3 phyllo pastry
75gr butter
1/2 cup yoghurt
1/2 cup milk
1 egg

Filling:
500gr spinach
1/2 onion, cut into small cubes
1/2 cup feta cheese, crumbled (optional)

On Top:
1 tablespoon Nigella seeds and/or sesame seeds

  • Soften the onion with olive oil for about a minute on a skillet. Add the spinach, toss, cook about 5 minutes. Put aside.
  • Melt the butter in a small saucepan. Cool down. Add yoghurt, milk and egg white, mix well. Keep the egg yolk to spread above the “borek”.
  • Take one sheet of phyllo pastry, lay it down on the counter with the long side in front of you. Brush it with the yoghurt mixture.Add another layer above it and brush it with the yoghurt mixture again. You can do as much layers as you prefer.
  • Place the filling along on the long side of the phyllo pastry. Make sure it’s 2 inches away from both ends. First fold the left and right ends from the outside to the inside. Then fold the top and roll.
  • Place it in a buttered oven safe bowl. Brush with the yoghurt mixture all over the top and sprinkle some Nigella seeds.
  • Preheat the oven to 350°F (180°C). Bake for 15-18 minutes until the tops take a golden color.

  3. Please can you tell us how to use ucgen Yufka. I have bought some and dont know what to do with it…I would like something with cheese. The pastry is NOT like thin filo…it is triangles that look slightly cooked on one side, and the instructions say to soak in water…but, there is no recipe… I woudl like something with cheese. Thank you
